Bahan
- Squid500g, cleaned and cut into rings
- Fresh Turmeric2 inches, grated or finely chopped
- Shallots4, thinly sliced
- Garlic4 cloves, minced
- Bird's Eye Chilies3-5, sliced (adjust to spice preference)
- Ginger1 inch, grated
- Lemongrass1 stalk, bruised
- Tamarind Paste1 tbsp, mixed with 2 tbsp water
- Vegetable Oil2 tbsp
- Saltto taste
- Black Pepperto taste

Prepare the squid by cleaning and cutting it into rings. Pat dry.

In a bowl, combine the grated turmeric, minced garlic, grated ginger, and sliced shallots to form a paste.

Heat vegetable oil in a wok or large skillet over medium-high heat.

Add the turmeric paste, bruised lemongrass, and sliced bird's eye chilies. Stir-fry until fragrant, about 1-2 minutes.

Add the squid rings to the wok. Stir-fry quickly until the squid is just cooked through and opaque, about 2-3 minutes. Do not overcook.

Stir in the tamarind water. Cook for another minute until the sauce thickens slightly.
