  • Squid500g, cleaned and cut into rings
  • Fresh Turmeric2 inches, grated or finely chopped
  • Shallots4, thinly sliced
  • Garlic4 cloves, minced
  • Bird's Eye Chilies3-5, sliced (adjust to spice preference)
  • Ginger1 inch, grated
  • Lemongrass1 stalk, bruised
  • Tamarind Paste1 tbsp, mixed with 2 tbsp water
  • Vegetable Oil2 tbsp
  • Saltto taste
  • Black Pepperto taste
