- Squid500g
- Coconut milk400ml
- Malaysian curry paste (fish or chicken)3 tbsp
- Shallots1
- Garlic2 cloves
- Turmeric powder1/2 tsp
- Curry leaves1 sprig
- Red chilies1
- Vegetable oil1 tbsp
- Saltto taste
- Water50ml

Clean and cut the squid into bite-sized pieces.

Finely chop shallots and garlic.

Heat oil in a pot. Sauté chopped shallots and garlic until softened.

Add curry paste and turmeric powder. Cook for 1-2 minutes until fragrant.

Add curry leaves and squid. Stir-fry until squid is almost cooked.

Pour in coconut milk and water. Bring to a gentle simmer.

Add sliced red chilies. Season with salt.

Simmer for 3-5 minutes until squid is cooked through. Avoid overcooking.
