- Beef (sirloin or flank)500g
- Galangal2 cm
- Ginger2 cm
- Garlic5 cloves
- Shallots8
- Red chilies (large)10
- Bird's eye chilies5
- Turmeric powder1 tsp
- Coriander powder1 tsp
- Saltto taste
- Black pepperto taste
- Water200ml
- Palm sugar2 tbsp
- Tamarind paste1 tbsp

Slice beef thinly against the grain. Pound the beef slices lightly to tenderize.

Marinate beef with salt, pepper, turmeric powder, and coriander powder. Let it sit for at least 30 minutes.

Prepare the chili paste: blend or pound galangal, ginger, garlic, shallots, red chilies, and bird's eye chilies until smooth.

Heat a generous amount of cooking oil in a wok or deep pan. Fry the marinated beef slices in batches until they are dark brown and crispy. Drain and set aside.

In a separate pan, heat a little oil. Sauté the chili paste until fragrant and the oil separates.

Add palm sugar and tamarind paste to the chili paste. Cook for a few minutes until the sugar dissolves and the sauce thickens.

Add the fried beef slices to the chili paste. Stir well to coat evenly. Cook for another 5-10 minutes until the flavors meld.

Adjust seasoning with salt and pepper if needed. Serve hot.
