- Beef chuck, cubed750 g
- Thick coconut milk400 ml
- Lemongrass, chopped2 stalks
- Kaffir lime leaves3 leaves
- Tamarind paste1 tbsp
- Saltto taste
- Sugar1 tsp
- Ground chili powder1-2 tbsp
- Ground ginger1 tsp
- Ground galangal1 tsp
- Ground turmeric1 tsp
- Ground coriander1 tbsp
- Ground cumin1 tsp
- Shallots, thinly sliced10
- Garlic, minced4 cloves
- Black pepper1 tsp

In a pot, sauté sliced shallots and minced garlic until fragrant.

Add ground chili powder, ginger, galangal, turmeric, coriander, and cumin. Stir for 1 minute until fragrant.

Add the cubed beef and stir to coat with the spice mixture.

Pour in the thick coconut milk, add chopped lemongrass, kaffir lime leaves, tamarind paste, salt, and sugar. Bring to a simmer.

Cover and simmer for 60-75 minutes, or until the beef is tender and the sauce has thickened. Stir occasionally.
