- Beef shank, cubed500g
- Water1.5 liters
- Coconut milk200ml
- Shallots, thinly sliced5
- Garlic, sliced3 cloves
- Ginger, sliced2 cm piece
- Galangal, sliced1 cm piece
- Turmeric, grated1 tsp
- Lemongrass, bruised1 stalk
- Bay leaves2
- Saltto taste
- Black pepperto taste
- Fried shallotsfor garnish
- Lime wedgesfor serving

Sauté sliced shallots, garlic, ginger, galangal, and turmeric in a pot until fragrant.

Add cubed beef and sear until browned on all sides.

Pour in water, add bruised lemongrass and bay leaves. Bring to a boil, then reduce heat and simmer covered for 2 hours, or until beef is very tender.

Stir in coconut milk and simmer gently for another 15 minutes. Do not boil rapidly after adding coconut milk.

Season with salt and black pepper to taste.

Remove lemongrass and bay leaves. Serve hot in bowls, garnished with fried shallots and lime wedges.
