- goat meat, bone-in1 kg
- coconut milk300 ml
- potatoes, cubed2 medium
- carrots, sliced1 medium
- onion, sliced1 large
- garlic, minced6 cloves
- ginger, grated3 cm
- lemongrass, bruised2 stalks
- dried chilies, soaked and blended5-7 pieces
- star anise2 pieces
- cardamom pods4 pieces
- cloves4 pieces
- cinnamon stick1 inch
- coriander powder1.5 tsp
- cumin powder1.5 tsp
- fennel powder1 tsp
- saltto taste
- black pepperto taste
- water1.5 liters
- fresh red chilies, slicedfor garnish
- cilantro, choppedfor garnish

In a large pot, sauté sliced onion, minced garlic, grated ginger, and blended dried chilies until fragrant and oil separates.

Add the goat meat and brown slightly. Stir in star anise, cardamom pods, cloves, cinnamon stick, coriander powder, cumin powder, and fennel powder. Cook for 2 minutes until aromatic.

Add water and bruised lemongrass. Bring to a boil, then reduce heat, cover, and simmer for 1.5 to 2 hours until the goat meat is very tender.

Add cubed potatoes and sliced carrots. Continue to simmer until vegetables are tender, about 20-30 minutes.

Stir in the coconut milk. Season with salt and black pepper. Simmer gently for 10 minutes.
