Clean and slice all mushrooms. Finely chop shallots and mince garlic.

In a large pot, melt butter over medium heat. Add shallots and sauté until translucent, about 4 minutes.

Add minced garlic and cook for 1 minute until fragrant.

Add all sliced mushrooms and cook, stirring occasionally, until browned and tender, about 10-12 minutes.

Add the fresh thyme and rosemary sprigs. Pour in the broth and bring to a simmer.

Reduce heat, cover, and simmer for 20 minutes to allow herbs to infuse.

Remove herb sprigs. Stir in the heavy cream. Season with salt and black pepper to taste.
