- Canned Sardines in Brine2 cans (approx. 400g)
- Laksa Paste (store-bought)4 tbsp
- Tamarind Paste1 tbsp
- Fish Stock1.5 liters
- Thick Rice Noodles (Laksa Noodles)300g
- Cucumber1/2
- Pineapple1/4
- Red Onion1/2
- Mint leaves1/2 bunch
- Saltto taste
- Wateras needed

Drain sardines, reserving some brine. Mash sardines coarsely.

In a pot, heat fish stock. Add laksa paste and simmer for 10 minutes.

Stir in tamarind paste and mashed sardines. Add a little reserved sardine brine if desired for extra flavor.

Simmer for another 15 minutes. Season with salt to taste.

Prepare toppings: julienne cucumber and pineapple, thinly slice red onion.

Blanch rice noodles.

Serve noodles in bowls, ladle the broth over, and garnish with toppings and mint.
