- chicken or prawn stock500 ml
- laksa noodles400g
- prawns200g

- bean sprouts100g

Soak dried chilies in hot water until softened. Drain and blend with shallots, garlic, galangal, lemongrass (white part only), turmeric, candlenuts, and shrimp paste to form a spice paste.

Heat a little oil in a pot and sauté the spice paste until fragrant and oil separates.

Add coconut milk and stock. Bring to a simmer, then reduce heat and cook for at least 30 minutes, stirring occasionally.

Season the broth with salt to taste.

Blanch laksa noodles and bean sprouts. Rinse under cold water.

Boil or steam prawns until cooked. Slice fish cakes.

To serve, place noodles and bean sprouts in bowls. Ladle the hot laksa broth over them. Top with prawns and fish cakes. Garnish with fresh cilantro and a lime wedge.
