Bahan
- Pre-made thick rice noodles500g
- Fish fillets (e.g., mackerel)300g
- Coconut milk400ml
- Fish stock or water500ml
- Lemongrass1 stalk, bruised
- Turmeric powder1 tsp
- Chili paste (sambal oelek or similar)1-2 tbsp
- Saltto taste
- Laksa leaves (Daun Kesum)1/4 cup, chopped
- Mint leaves1/4 cup, chopped
- Lime1

Cook the fish fillets in water or fish stock until done. Remove fish, flake it, and set aside. Reserve the cooking liquid.

In a pot, combine coconut milk, reserved fish cooking liquid, bruised lemongrass, turmeric powder, and chili paste. Bring to a simmer.

Add the flaked fish to the simmering broth. Cook for 5 minutes.

Season the broth with salt to taste. Remove the lemongrass stalk.

Divide the pre-made rice noodles among serving bowls. Ladle the hot broth over the noodles. Garnish with chopped laksa leaves, mint leaves, and a lime wedge.
