- Dried shrimp50g
- Shallots100g
- Garlic3 cloves
- Ginger1 inch
- Chili paste (sambal)2 tbsp
- Curry leaves1 sprig
- Shrimp paste (belacan)1 tsp
- Chicken or shrimp stock1 liter
- Peanut butter2 tbsp
- Saltto taste

- Hard-boiled eggs4
- Bean sprouts100g
- Green chilies2
- Fried shallotsfor garnish
- Lime wedgesfor garnish

Boil sweet potatoes until tender, then mash them. Soak dried shrimp in warm water for 15 minutes, then drain and finely chop.

Blend or pound shallots, garlic, ginger, chili paste, and shrimp paste into a fine paste.

Heat oil in a pot and sauté the spice paste with curry leaves until fragrant.

Add the chopped dried shrimp and cook for a few minutes.

Pour in the stock and bring to a boil. Add the mashed sweet potato and peanut butter, stirring until the gravy thickens.

Season with salt to taste. Simmer for 10-15 minutes, adding water if the gravy is too thick.

Blanch the yellow noodles and bean sprouts briefly.

To serve, place noodles and bean sprouts in a bowl, ladle the hot gravy over them, and garnish with sliced hard-boiled eggs, green chilies, fried shallots, lime wedges, and cilantro.
