- Water1.5 cups
- Fenugreek seeds (Halba)1 tbsp
- Salt1 tsp
- Chicken pieces (thighs or drumsticks)600g
- Chilies (fresh and dried)10-15
- Shallots6-8
- Garlic4 cloves
- Ginger1.5 inch
- Lemongrass2 stalks
- Galangal1 inch
- Turmeric powder1 tsp
- Cumin powder1 tsp
- Coriander powder1 tsp
- Tamarind paste1 tbsp
- Coconut milk (for basting)1 cup
- Sugar2 tbsp
- Assorted vegetables for acar1.5 cups
- Vinegar3 tbsp
- Hard-boiled eggs4

Prepare the rice as per the traditional Nasi Dagang recipe.

Prepare Ayam Percik: Blend chilies, shallots, garlic, ginger, lemongrass, and galangal into a paste. Add turmeric, cumin, coriander powder, tamarind paste, sugar, and salt. Mix well.

Marinate chicken pieces with half of the paste for at least 1 hour.

Grill or bake the marinated chicken until almost cooked. Baste generously with the remaining paste mixed with coconut milk during the last few minutes of grilling until glossy and slightly charred.

Prepare acar as per the traditional Nasi Dagang recipe.

Serve the fragrant rice with the Ayam Percik, acar, and a hard-boiled egg.
