Prepare the rice: Cook basmati rice until fluffy and keep warm.

Prepare Ayam Goreng Berempah marinade: Blend garlic, ginger, lemongrass, dried chilies, turmeric, coriander, cumin, and fennel seeds into a paste. Marinate chicken pieces with this paste, curry leaves, salt, and pepper for at least 30 minutes.

Fry the chicken: Coat marinated chicken pieces with a mixture of rice flour and cornstarch. Deep-fry until golden brown and crispy. Drain excess oil.

Prepare the Nasi Kandar curry: Sauté blended onions, garlic, and ginger in oil until fragrant. Add coconut milk and tamarind paste. Simmer until the gravy thickens. Season with salt and pepper.
