- Beef, lean, finely shredded400g
- Shredded unsweetened coconut100g
- Coconut milk150ml
- Shallots, thinly sliced100g
- Garlic, minced2 cloves
- Ginger, grated1/2 inch piece
- Lemongrass, bruised1 stalk
- Turmeric powder1 tsp
- Chili powder1 tbsp
- Saltto taste
- Sugar1 tbsp
- Tamarind paste1 tsp
- Vegetable oil2 tbsp

In a bowl, mix the shredded beef with turmeric powder, chili powder, salt, and sugar. Set aside.

Heat vegetable oil in a wok or large pan over medium heat. Sauté shallots, garlic, and ginger until fragrant.

Add the bruised lemongrass stalk and stir-fry for another minute.

Add the marinated beef and stir-fry until it changes color.

Add the shredded coconut and stir-fry for 5 minutes until lightly toasted.

Pour in the coconut milk and tamarind paste. Bring to a simmer and cook, stirring occasionally, until the liquid has mostly evaporated.

Reduce heat to low and continue to cook, stirring constantly, until the mixture is dry and fluffy, with the coconut adding a slightly chewy texture. This takes about 1-1.5 hours.

Remove lemongrass stalk. Taste and adjust seasoning.
