Cut chicken thighs into bite-sized cubes. Soak bamboo skewers in water for at least 30 minutes.

Prepare the marinade: Blend shallots, garlic, galangal, ginger, turmeric, coriander, and tamarind paste until smooth. Mix with coconut milk, sweet soy sauce, palm sugar, salt, and pepper.

Marinate the chicken cubes for at least 1 hour, or up to 4 hours in the refrigerator.

Thread the marinated chicken onto the skewers.

Prepare the peanut sauce: Sauté shallots and garlic in vegetable oil. Add peanut butter, coconut milk, water, sweet soy sauce, palm sugar, and tamarind paste. Simmer until slightly thinner than classic satay sauce. Season.

Grill the chicken skewers over medium-high heat for 8-10 minutes, turning, until cooked through and caramelized.

Serve the Satay Ayam Madura hot, drizzled with the distinct peanut sauce, and garnished with sliced shallots, chili, and fried shallots.
