A simplified and quicker version of Satar Terengganu, using pre-ground fish or fish paste and fewer aromatics, suitable for a weeknight meal. Still retains the core flavors of fish, coconut, and spices, wrapped and grilled.

- Fish paste (e.g., surimi or pre-ground white fish)400g
- Freshly grated coconut3/4 cup
- Coconut milk1/4 cup
- Shallots, finely chopped1/4 cup
- Dried chili paste (cili kering)1 tbsp
- Salt1/2 tsp
- Sugar1/2 tsp
- Banana leaves, wilted10-12 pieces

In a bowl, combine the fish paste, grated coconut, coconut milk, shallots, chili paste, salt, and sugar. Mix until well combined.

Spoon about 2 tablespoons of the mixture onto a piece of wilted banana leaf. Fold the leaf to form a small, flattened parcel.

Repeat with the remaining mixture and banana leaves.

Grill the satar parcels over medium heat for about 10-15 minutes, flipping once, until cooked through.
