Prepare the fish paste and dough as per the traditional Keropok Lekor recipe (Steps 1-3).

Shape the dough into long logs.

Boil the shaped keropok lekor until they float (about 5-8 minutes). Drain and cool completely.

Heat a generous amount of oil in a wok or deep fryer over medium-high heat until very hot.

Deep-fry the boiled keropok lekor in batches until they are deeply golden brown and very crispy. This may take longer than the traditional version, about 8-12 minutes per batch.

Remove from oil and drain on paper towels. Ensure excess oil is absorbed for maximum crispiness.
