- All-purpose flour200g
- Rice flour50g
- Sugar100g
- Eggs2
- Coconut milk250ml
- Baking powder1 tsp
- Salt1/4 tsp
- Vegetable oil2 tbsp
- Crushed roasted peanuts150g
- Sweet corn kernels100g
- Margarine or butterfor greasing

In a large bowl, whisk together all-purpose flour, rice flour, sugar, baking powder, and salt.

In a separate bowl, whisk eggs and coconut milk until well combined.

Gradually add the wet ingredients to the dry ingredients, whisking until a smooth batter forms. Stir in vegetable oil.

Let the batter rest for at least 30 minutes.

Heat a non-stick pan or apam balik mold over medium heat. Grease lightly with margarine or butter.

Pour a ladleful of batter into the hot pan, spreading it thinly to form a round pancake.

Cook until the edges start to lift and the surface appears set. Sprinkle crushed peanuts, sugar, and sweet corn kernels over one half of the pancake.

Fold the other half of the pancake over the filling using a spatula.

Cook for another minute or two until golden brown and slightly crispy. Remove from pan and serve immediately.
