- Pandan Extract1 teaspoon

Prepare the quick filling: In a saucepan, combine desiccated coconut, brown sugar, pandan extract, 1/4 cup water, and a pinch of salt. Cook over medium-low heat, stirring, until the sugar dissolves and the mixture is moist and slightly sticky. Set aside to cool.

Prepare the crepe batter: In a bowl, whisk together all-purpose flour, egg, milk, and vegetable oil until smooth. Stir in pandan extract for color and flavor. The batter should be thin.
