A traditional Malaysian sweet cake, Kuih Akok is made from a batter of eggs, coconut milk, sugar, and pandan leaves, baked until golden brown with a slightly chewy and custardy texture.

- Coconut milk400 ml
- Granulated sugar200 g
- Pandan leaves3-4 leaves, blended into a paste
- All-purpose flour50 g
- Salt1/4 teaspoon

Preheat oven to 180°C (350°F). Grease and flour traditional kuih akok molds or a small baking tray.

In a large bowl, whisk the eggs until well combined.

Add coconut milk, granulated sugar, pandan paste, and salt. Whisk until the sugar is dissolved and the mixture is smooth.

Sift in the all-purpose flour and whisk gently until just combined. Do not overmix.

Pour the batter into the prepared molds or baking tray, filling about 3/4 full.

Bake for 25-30 minutes, or until the kuih akok is golden brown and a skewer inserted into the center comes out clean.

Let it cool slightly in the molds before unmolding. Serve warm or at room temperature.
