- Chicken breast, diced150g
- Shrimp, peeled and deveined100g
- Shallots, finely chopped4
- Garlic, minced3 cloves
- Bird's eye chilies, finely chopped3-5 (or to taste)
- Chili paste (sambal oelek)1 tbsp
- Eggs4
- Kecap manis (sweet soy sauce)3 tbsp
- Terasi (shrimp paste), toasted and mashed1 tsp
- Vegetable oil3 tbsp
- Saltto taste
- Black pepperto taste
- Cucumber slices, for garnish1/2
- Tomato slices, for garnish1
- Acar (pickled vegetables), for serving1/4 cup

Heat vegetable oil in a large wok or skillet over medium-high heat. Add shallots, garlic, and bird's eye chilies. Stir-fry until fragrant.

Add diced chicken and shrimp. Stir-fry until almost cooked through.

Add the chili paste (sambal oelek) and mashed shrimp paste. Stir well and cook for another minute.

Push ingredients to the side, crack in the eggs, and scramble. Mix with the other ingredients.

Add the cooled cooked rice. Stir-fry to combine everything.

Pour in the kecap manis. Season with salt and black pepper. Stir-fry until the rice is well-coated and heated through, about 5 minutes.

Fry the eggs separately until sunny-side up.

Serve the Nasi Goreng Cina Medan hot, topped with a fried egg, and garnished with cucumber and tomato slices. Serve acar on the side.
