Prepare the spice paste: pound or blend shallots, garlic, red chilies, dried shrimp, and shrimp paste until smooth.

Cut chicken thighs into small bite-sized pieces.

Heat vegetable oil in a wok or large skillet over medium-high heat. Add the spice paste and stir-fry until fragrant and slightly darkened.
