- Glutinous rice500g
- Peanuts, roasted and ground250g
- Dried chilies, soaked and blended15-20
- Shallots, blended150g
- Garlic, blended50g
- Lemongrass, blended2 stalks
- Galangal, blended1 inch
- Tamarind paste2 tbsp
- Coconut milk400ml
- Palm sugar50g
- Saltto taste
- Cooking oil4 tbsp

Cook the glutinous rice until soft. Press it firmly into a rectangular mold and let it cool completely, then cut into cubes for nasi impit.

Heat cooking oil in a pot. Sauté the blended chili, shallots, garlic, lemongrass, and galangal until fragrant and the oil separates.

Add the ground peanuts and stir well. Cook for a few minutes.

Pour in the coconut milk and tamarind paste. Add palm sugar and salt. Stir until the sugar dissolves.

Simmer the sauce over low heat, stirring occasionally, until it thickens to your desired consistency. Add water if it becomes too thick.

Serve the nasi impit cubes with the kuah kacang. Garnish with chili slices and mint if desired.
