- Jasmine rice2 cups
- Beef broth3 cups
- Onions2 medium
- Garlic4 cloves
- Ginger1 inch piece
- Dried chilies5-8 (soaked and blended)
- Fresh red chilies2 (sliced, optional)
- Star anise2
- Cinnamon stick1
- Cardamom pods3
- Cloves5
- Soy sauce3 tbsp
- Dark soy sauce1 tbsp
- Oyster sauce1 tbsp
- Sugar1 tsp
- Saltto taste
- Black pepperto taste

- Vegetable oil2 tbsp

Rinse the rice and set aside.

Cut beef into large chunks. Season with salt and black pepper.

Heat vegetable oil in a pot or Dutch oven. Sear the beef chunks until browned on all sides. Remove beef and set aside.

Finely chop onions, garlic, and ginger. Sauté in the same pot until fragrant.

Add the blended dried chilies and sauté for 2-3 minutes until the oil separates and the chili is fragrant.

Add star anise, cinnamon stick, cardamom pods, and cloves. Toast for 1 minute until fragrant.

Return the beef to the pot. Add beef broth, soy sauce, dark soy sauce, oyster sauce, and sugar. Bring to a boil.

Reduce heat, cover, and simmer for 1.5 to 2 hours, or until the beef is very tender. Add water if needed.

Once beef is tender, remove it from the pot. Shred or slice the beef. Strain the braising liquid and reserve.

In a rice cooker or pot, combine the rinsed rice with 2 cups of the reserved braising liquid (or enough to cook the rice). Add a pinch of salt if needed.

Cook the rice until done. Fluff with a fork.

Serve the spicy fragrant rice topped with the braised beef. Garnish with cilantro, fried shallots, and sliced fresh chilies if desired.
