- Cooked rice (day-old)4 cups
- Dried anchovies (ikan bilis)1/2 cup
- Shallots3, sliced
- Garlic2 cloves, minced
- Red chilies3-5, sliced
- Belacan (shrimp paste)1 tsp, toasted
- Kangkung (water spinach)1 cup, chopped
- Eggs2
- Soy sauce2 tbsp
- Saltto taste
- Vegetable oil3 tbsp
- Cucumber slicesfor garnish
- Fried shallotsfor garnish

Rinse dried anchovies and pat dry. Heat oil in a wok over medium-high heat. Fry anchovies until crispy. Remove and set aside, leaving some oil in the wok.

In a mortar or small food processor, pound or blend shallots, garlic, red chilies, and toasted belacan into a paste.

Add the chili paste to the wok and stir-fry until fragrant. Add chopped kangkung and stir-fry for 1-2 minutes until slightly wilted.

Push the kangkung mixture to one side of the wok. Crack the eggs into the empty side and scramble them. Once cooked, mix with the kangkung.

Add the cooked rice and soy sauce to the wok. Stir-fry vigorously, breaking up any clumps, until the rice is heated through and well combined.

Stir in most of the crispy anchovies. Season with salt if needed. Serve hot, garnished with remaining anchovies, fried shallots, and cucumber slices.
