- Beef (stewing cuts)700 g
- Thick coconut milk400 ml
- Rendang paste (store-bought)100 g
- Lemongrass1 stalk
- Galangal2 cm
- Kaffir lime leaves3
- Gula Melaka (palm sugar)1 tbsp
- Saltto taste
- Water100 ml

Cut beef into 1-inch cubes.

Bruise lemongrass and galangal.

Heat a pot or wok over medium-high heat. Add the rendang paste and sauté until fragrant.

Add the beef cubes and stir-fry until browned on all sides.

Pour in the coconut milk, water, bruised lemongrass, galangal, and kaffir lime leaves. Bring to a simmer.

Reduce heat to low, cover, and simmer for 1 to 1.5 hours, or until the beef is tender and the sauce has thickened.

Stir in Gula Melaka and salt to taste. Cook uncovered for another 15-20 minutes to allow the sauce to reduce further and thicken.
