Bahan
- Chicken pieces (thighs and drumsticks)1 kg
- Coconut milk (canned)200 ml
- Chili paste (sambal oelek or similar)4 tbsp
- Lemongrass (paste or finely chopped)1 tbsp
- Tamarind paste1 tbsp
- Sugar2 tbsp
- Saltto taste
- Vegetable oil2 tbsp
- Water50 ml
- Cilantro (for garnish)a few sprigs

In a bowl, mix chicken pieces with half of the chili paste, lemongrass paste, tamarind paste, sugar, salt, and 1 tbsp oil. Marinate for at least 15 minutes.

In a saucepan, heat the remaining 1 tbsp oil. Add the remaining chili paste and sauté for 1 minute.

Add coconut milk and water. Stir in sugar and salt. Bring to a simmer and cook for 10 minutes until slightly thickened. This is your basting sauce.

Preheat grill or broiler to medium-high heat.

Grill the marinated chicken, turning occasionally. Baste with the prepared sauce during the last 5-7 minutes of grilling until cooked through.
