- Lemongrass, finely chopped1 stalk
- Chili powder (optional)1 tsp
- Salt1.5 tsp
- Black pepper1 tsp
- Water4 tbsp
- Cooking oil, for deep fryingsufficient amount

Create spice paste: Blend turmeric powder, grated ginger, garlic cloves, shallots, coriander powder, cumin powder, finely chopped lemongrass, and optional chili powder with a little water to form a smooth paste.

Marinate chicken: In a bowl, combine chicken pieces with the spice paste, salt, and black pepper. Mix thoroughly. Marinate for at least 1 hour, or preferably 2-3 hours in the refrigerator.

Heat oil: Heat a generous amount of cooking oil in a deep pot or wok over medium-high heat until hot (around 170-180°C).

Fry chicken: Carefully add the marinated chicken to the hot oil, working in batches if needed to avoid overcrowding. Fry for approximately 15-20 minutes, turning occasionally, until the chicken is deeply golden brown, crispy, and cooked through.
