- Chicken breast or thigh, cubed500g
- Shallots, thinly sliced100g
- Garlic, minced3 cloves
- Chili paste (sambal tumis)3 tbsp
- Tomato paste2 tbsp
- Coconut milk150 ml
- Tamarind paste1 tsp
- Sugar1 tbsp
- Saltto taste
- Black pepperto taste
- Vegetable oil2 tbsp
- Wateras needed
- Kaffir lime leaves2

Heat vegetable oil in a pan. Sauté sliced shallots and minced garlic until fragrant.

Add chili paste and tomato paste. Cook for 2-3 minutes until the oil separates.

Add cubed chicken and stir-fry until it changes color.

Pour in coconut milk, tamarind paste, sugar, salt, and black pepper. Add kaffir lime leaves.

Add a little water if the sauce is too thick. Bring to a simmer and cook for 15-20 minutes, or until chicken is cooked through and sauce has thickened slightly.
