- Chicken drumettes or wings1 kg
- Honey80 ml
- Soy sauce40 ml
- Tamarind paste1 tbsp
- Garlic, minced3 cloves
- Dried chilies, soaked and blended2 tbsp
- Shallots, blended1 medium
- Ginger, grated1 tsp
- Lemongrass, bruised1 stalk
- Vegetable oil2 tbsp
- Water150 ml
- Saltto taste
- Black pepperto taste
- Mint leaves, for garnisha few

Season chicken pieces with salt and pepper.

Heat vegetable oil in a pot or Dutch oven over medium-high heat. Brown the chicken pieces on all sides. Remove and set aside.

Add blended shallots, minced garlic, grated ginger, and blended dried chilies to the pot. Sauté until fragrant and oil separates.

Add bruised lemongrass.

Return chicken to the pot. Pour in honey, soy sauce, tamarind paste, and water.

Bring to a boil, then reduce heat to low, cover, and simmer for 30-35 minutes, or until chicken is tender and the sauce has thickened.

Adjust seasoning with salt and pepper if needed. The sauce should be thick, spicy, and sweet.
