- Chicken pieces (boneless, thigh or breast)500g
- Coconut milk200 ml
- Onion1 medium
- Garlic cloves3
- Ginger1-inch piece
- Potatoes1 medium
- Mamak curry paste3-4 tbsp
- Vegetable oil2 tbsp
- Curry leaves1 sprig
- Saltto taste
- Wateras needed
- Fresh cilantrofor garnish

Chop onion, garlic, and ginger finely. Cube potatoes.

Heat oil in a pot over medium heat. Sauté onion, garlic, and ginger until fragrant.

Add curry leaves and Mamak curry paste. Cook for 2-3 minutes, stirring constantly, until fragrant.

Add chicken pieces and stir to coat. Cook for 5 minutes until lightly browned.

Add potatoes, coconut milk, and about 1/2 cup of water. Bring to a simmer.

Cover and simmer for 20-25 minutes, or until chicken is cooked through and potatoes are tender. Stir occasionally.

Season with salt to taste. Add more water if the curry is too thick.

Garnish with fresh cilantro before serving.
