- Chicken thighs, boneless and skinless600 g
- Potatoes2 medium
- Carrots1 large
- Coconut milk400 ml
- Chicken curry paste3-4 tbsp
- Vegetable oil2 tbsp
- Water200 ml
- Saltto taste
- Sugar1 tsp
- Fresh cilantrofor garnish

Prepare ingredients: Cut chicken into bite-sized pieces. Peel and cube potatoes and carrots.

Sauté curry paste: Heat vegetable oil in a pot or wok over medium heat. Add the curry paste and sauté until fragrant, about 2-3 minutes.

Add chicken and vegetables: Add the chicken pieces and stir-fry until lightly browned. Add the potatoes and carrots.

Simmer the curry: Pour in the coconut milk and water. Bring to a boil, then reduce heat, cover, and simmer for 20-25 minutes, or until chicken is cooked through and vegetables are tender.

Season: Stir in salt and sugar to taste. Adjust seasoning as needed.
