Cook the salmon: Season salmon fillets with salt and pepper. Heat vegetable oil in a non-stick skillet over medium-high heat. Sear salmon for 3-4 minutes per side until cooked through and flaky. Let cool slightly, then flake into bite-sized pieces.

Prepare the pomelo: Peel the pomelo and separate the segments. Remove the pith and membranes, then break the segments into bite-sized pieces.

Assemble the salad: In a large bowl, combine the pomelo pieces, flaked salmon, sliced shallots, chopped mint, and chopped cilantro.
