A classic Vietnamese dessert featuring incredibly smooth, silken tofu pudding served with a fragrant ginger-infused sweet coconut milk broth and topped with toasted sesame seeds and sometimes pandan leaves. It's a refreshing and delicate treat.

- Soy milk (unsweetened)1 liter
- Agar-agar powder5 grams
- Sugar100 grams
- Fresh ginger30 grams
- Coconut milk400 ml
- Water100 ml
- Toasted sesame seeds2 tablespoons
- Pandan leaves (optional)2 leaves

In a saucepan, combine soy milk and agar-agar powder. Whisk well and let it sit for 10 minutes.

Heat the soy milk mixture over medium heat, stirring constantly until it comes to a gentle boil and the agar-agar is fully dissolved. Remove from heat.

Pour the mixture into a shallow dish or individual serving bowls. Let it cool completely, then refrigerate until set (about 1-2 hours).

While the tofu pudding sets, prepare the broth. Grate or finely mince the fresh ginger.

In a separate saucepan, combine coconut milk, sugar, grated ginger, and 100 ml water. If using pandan leaves, tie them into a knot and add them to the pot.

Heat the broth mixture over medium-low heat, stirring until the sugar dissolves. Simmer gently for 5-10 minutes to infuse the ginger flavor. Do not boil vigorously. Remove pandan leaves if used.

To serve, gently scoop the set tofu pudding into serving bowls. Ladle the warm ginger-coconut broth over the pudding. Sprinkle with toasted sesame seeds.
