
Siro Mận (Classic Plum Syrup)

A traditional Vietnamese plum syrup made from ripe plums, sugar, and sometimes a touch of salt, simmered to create a rich, sweet, and slightly tart concentrate. It's a refreshing drink, often served diluted with water and ice.

- Ripe plums1 kg
- Granulated sugar500 g
- Salt1/4 teaspoon
- Water100 ml

Wash the plums thoroughly. Cut them in half and remove the pits.

In a large pot, combine the pitted plums, sugar, salt, and water. Stir gently.

Place the pot over medium heat and bring to a simmer, stirring occasionally until the sugar dissolves.

Reduce the heat to low and let it simmer for about 45-60 minutes, or until the plums have softened and broken down, and the syrup has thickened. Stir occasionally to prevent sticking.

Mash the plums gently with a spoon or potato masher to release more juice.

Strain the mixture through a fine-mesh sieve, pressing down on the solids to extract as much liquid as possible. Discard the solids.

Return the strained syrup to the pot and simmer for another 10-15 minutes until it reaches a thick, syrupy consistency.

Let the syrup cool completely. Pour into a clean bottle or jar and store in the refrigerator.
