Nguyên liệu
- Dried lotus seeds100g
- Dried longan50g
- Rock sugar100g
- Water1.5 liters
- Pandan leaves (optional)2-3 stalks
- Salt1 pinch

Soak dried lotus seeds in water for at least 4 hours or overnight. Drain and rinse.

In a pot, combine soaked lotus seeds with 1.5 liters of water. Bring to a boil, then reduce heat and simmer for about 45-60 minutes, or until the lotus seeds are tender.

Add dried longans and rock sugar to the pot. If using pandan leaves, tie them into a knot and add them.

Continue to simmer for another 15-20 minutes, until the rock sugar is dissolved and the longans are plump and soft.

Remove pandan leaves. Add a pinch of salt to balance the sweetness.

Let the sweet soup cool completely. Serve chilled, optionally with ice cubes.
