- Dried shiitake mushrooms5-6
- Ginger1 piece (about 5 cm)
- Shallots2
- Star anise2
- Cinnamon stick1
- Fennel seeds1 tsp
- Glass noodles (Mien)200g
- Scallions3 stalks
- Cilantro1 bunch
- Fish sauceto taste
- Saltto taste
- Black pepperto taste
- Water2.5 liters

Prepare the chicken: Rinse the whole chicken. Place it in a large pot with enough water to cover. Bring to a boil, then reduce heat and simmer for 45-60 minutes, or until cooked through. Skim off any impurities during cooking. Remove chicken, let cool, then shred the meat.

Prepare the broth aromatics: Lightly char the ginger and shallots over an open flame or under a broiler until fragrant and slightly blackened. Peel and smash the ginger. Peel and smash the shallots.

Infuse the broth: In a separate pot, combine the chicken broth (from cooking the chicken), charred ginger, charred shallots, dried shiitake mushrooms, star anise, cinnamon stick, and fennel seeds. Simmer gently for at least 30 minutes to allow the flavors to meld. Strain the broth.

Prepare the glass noodles: Soak the glass noodles in warm water according to package instructions until softened. Drain well.

Assemble the soup: Divide the soaked glass noodles among serving bowls. Top with shredded chicken. Ladle the hot, strained broth over the noodles and chicken.

Garnish: Chop the scallions and cilantro finely. Garnish the soup with the fresh herbs. Season with fish sauce, salt, and black pepper to taste.
