- Pork ribs500g
- Jasmine rice1 cup
- Water8 cups
- Fish sauce2 tbsp
- Salt1 tsp
- Black pepper1/2 tsp
- Scallions2 stalks
- Cilantro1/4 cup
- Ginger1 inch piece
- Garlic2 cloves

Rinse the rice thoroughly and soak it in water for at least 30 minutes. Drain well.

Wash the pork ribs and cut them into manageable pieces. Blanch the ribs in boiling water for 5 minutes, then rinse and drain.

In a large pot, combine the drained rice, pork ribs, 8 cups of water, and the ginger and garlic (bruised).

Bring to a boil, then reduce heat to low, cover, and simmer for at least 60-75 minutes, stirring occasionally to prevent sticking. Add more water if the congee becomes too thick.

Once the rice has broken down and the congee is thick and creamy, remove the ginger, garlic, and pork ribs. Shred the meat from the ribs and discard bones.

Return the shredded pork to the congee. Season with fish sauce, salt, and black pepper to taste.

Simmer for another 5-10 minutes to allow flavors to meld.

Serve hot, garnished with chopped scallions and cilantro, and a sprinkle of black pepper.
