- Fresh lemongrass stalks3 stalks
- Lime leaves15 leaves
- Garlic cloves4 cloves
- Shallots2 shallots
- Fish sauce4 tbsp
- Honey2 tbsp
- Lime juice2 tbsp
- Vegetable oil2 tbsp
- Salt1 tsp
- Black pepper1/2 tsp
- Water2 tbsp

Finely mince the lemongrass (white part only), garlic, and shallots. Roughly chop the lime leaves.

In a large bowl, combine the minced lemongrass, garlic, shallots, chopped lime leaves, fish sauce, honey, lime juice, vegetable oil, salt, and pepper. Mix well.

Cut the chicken thighs into bite-sized pieces. Add the chicken to the marinade and toss to coat evenly. Marinate for at least 30 minutes, or preferably 2-4 hours in the refrigerator.

Preheat your grill to medium-high heat. Thread the marinated chicken onto skewers if desired, or grill directly on the grates.

Grill the chicken for 15-20 minutes, turning occasionally, until cooked through and slightly charred. Baste with any remaining marinade during the last few minutes of grilling.
