- Scallions (green onions)300g
- Ginger50g
- Garlic3 cloves
- Fish sauce3 tbsp
- Salt1 tsp
- Black pepper1/2 tsp
- Water1/4 cup

Prepare the chicken: Cut chicken into bite-sized pieces. Marinate with salt, black pepper, and 1 tbsp fish sauce.

Prepare aromatics: Cut scallions into 2-inch sections, separating white and green parts. Thinly slice ginger and mince garlic.

Assemble for steaming: In a heatproof bowl or steamer basket, arrange chicken pieces. Top generously with white parts of scallions, ginger slices, and minced garlic.

Steam the chicken: Place the bowl/basket in a steamer. Steam over medium-high heat for 20-25 minutes, or until chicken is cooked through.

Finish and serve: Drizzle remaining 2 tbsp fish sauce over the steamed chicken. Garnish with the green parts of the scallions. Serve hot.
