  • Dried goji berries30g
  • Dried jujubes (red dates)50g
  • Astragalus root slices20g
  • Codonopsis pilosula root slices20g
  • Angelica sinensis (Dang gui) slices10g
  • Ginger50g, sliced
  • Scallions3 stalks, cut into sections
  • Water2 liters
  • Saltto taste
  • Black pepperto taste

    Rinse the black chicken thoroughly and blanch it in boiling water for 5 minutes to remove impurities. Drain and rinse under cold water.

    Rinse all dried herbs and roots. Soak goji berries and jujubes briefly in warm water.

    Place the blanched chicken in a large pot or clay pot. Add all the prepared herbs, roots, ginger, and scallions.

    Pour in 2 liters of water, ensuring the chicken is fully submerged. Bring to a boil over high heat.

    Once boiling, reduce the heat to low, cover the pot, and simmer gently for at least 2.5 to 3 hours, or until the chicken is very tender.

    Skim off any excess fat or impurities that rise to the surface during simmering.
