- Black chicken (Gà ác)1 whole (about 1-1.5 kg)
- Dried goji berries30g
- Dried jujubes (red dates)50g
- Astragalus root slices20g
- Codonopsis pilosula root slices20g
- Angelica sinensis (Dang gui) slices10g
- Ginger50g, sliced
- Scallions3 stalks, cut into sections
- Water2 liters
- Saltto taste
- Black pepperto taste

Rinse the black chicken thoroughly and blanch it in boiling water for 5 minutes to remove impurities. Drain and rinse under cold water.

Rinse all dried herbs and roots. Soak goji berries and jujubes briefly in warm water.

Place the blanched chicken in a large pot or clay pot. Add all the prepared herbs, roots, ginger, and scallions.

Pour in 2 liters of water, ensuring the chicken is fully submerged. Bring to a boil over high heat.

Once boiling, reduce the heat to low, cover the pot, and simmer gently for at least 2.5 to 3 hours, or until the chicken is very tender.

Skim off any excess fat or impurities that rise to the surface during simmering.

Season the soup with salt and black pepper to taste just before serving.

Serve hot, ensuring each bowl gets a portion of the chicken and plenty of broth and herbs.
