- Black pepper1 tsp

- Rice flour1/4 cup

Clean and pat dry the chicken pieces. Score larger pieces for even cooking.

In a bowl, combine chicken with fish sauce, minced garlic, minced shallots, sugar, black pepper, and salt. Marinate for at least 30 minutes, or up to 2 hours in the refrigerator.

In a separate shallow dish, mix cornstarch and rice flour. This will form the crispy coating.

Dredge each marinated chicken piece thoroughly in the cornstarch and rice flour mixture, ensuring an even coating.
