- Roasted peanuts1/4 cup

- Garlic1 clove
- Chili pepper1/2

Boil chicken breast until cooked through. Let cool, then shred finely.

Peel the mangosteens and separate the segments. If large, cut segments in half.

Thinly slice the red onion. Julienne the carrots.

Prepare the dressing: whisk together fish sauce, lime juice, sugar, minced garlic, and finely chopped chili. Adjust seasoning to taste.

In a large bowl, combine shredded chicken, mangosteen segments, sliced red onion, and julienned carrots.
