- Duck1 kg, cut into pieces
- Star fruit (Sấu)3-4 pieces, peeled and pitted
- Shallots2, minced
- Garlic3 cloves, minced
- Ginger1 inch piece, sliced
- Lemongrass2 stalks, bruised and cut into sections
- Fish sauce3 tablespoons
- Sugar1 tablespoon
- Turmeric powder1 teaspoon
- Annatto oil (or seeds)1 tablespoon
- Water500 ml
- Saltto taste
- Black pepperto taste
- Fresh cilantrofor garnish
- Fresh scallionsfor garnish
- Red chiliesfor garnish, optional

Marinate duck pieces with salt, black pepper, minced shallots, garlic, fish sauce, sugar, turmeric powder, and annatto oil for at least 30 minutes.

Heat a pot or Dutch oven over medium-high heat. Sear the marinated duck pieces until browned on all sides.

Add bruised lemongrass stalks and sliced ginger to the pot. Stir-fry for 1 minute until fragrant.

Add the peeled and pitted star fruit (sấu). Stir gently to combine.

Pour in water, ensuring the duck is mostly submerged. Bring to a boil, then reduce heat to low, cover, and simmer for 60-75 minutes, or until the duck is tender.

Season with additional salt and pepper to taste. The star fruit should have softened and released its sourness into the broth.

Serve hot, garnished with fresh cilantro, scallions, and sliced red chilies if desired.
