- Scallions1 bunch
- Cilantro1 bunch
- Fish sauce3 tbsp
- Star anise3 pods
- Cinnamon stick1
- Water8 cups

Prepare the duck: Clean the duck and rub with salt. Roast or boil until cooked through. Reserve the broth.

Shred the duck meat and set aside.

Wash the rice thoroughly.

In a large pot, combine the rice, reserved duck broth, and 8 cups of water. Add sliced ginger, star anise, and cinnamon stick.

Bring to a boil, then reduce heat and simmer, stirring occasionally, until the rice breaks down and the congee thickens (about 1-1.5 hours).

Remove aromatics (ginger, star anise, cinnamon).

Stir in fish sauce, salt, and pepper to taste.

Ladle the congee into bowls. Top with shredded duck meat, chopped scallions, cilantro, and fried shallots.
