- Rice vermicelli noodles (bún tươi)500g
- Shrimp paste (chả tôm)200g
- Fish paste (chả cá)200g
- Pork bones or chicken carcass500g
- Shallots2
- Garlic3 cloves
- Ginger1 inch piece
- Scallions1 bunch
- Cilantro1 bunch
- Fish sauce3 tbsp
- Salt1 tsp
- Sugar1 tsp
- Chilito taste
- Lime1
- Water2 liters

Prepare the broth: Simmer pork bones or chicken carcass with ginger, shallots, and garlic in water for at least 1 hour. Strain to get a clear broth.

Season the broth with fish sauce, salt, and sugar. Keep warm.

Prepare the pastes: Mix shrimp paste and fish paste with a little fish sauce and finely chopped scallions. Form into small balls or patties.

Cook the noodles: Blanch fresh rice vermicelli noodles in boiling water until just tender. Drain and divide into serving bowls.

Assemble the bowls: Place a few balls of shrimp and fish paste into each bowl of noodles. Ladle hot broth over them.

Serve immediately with chopped cilantro, chili, and lime wedges on the side for diners to 'quậy' (stir) into their soup.
