- Glutinous rice flour250g
- Tapioca starch30g
- Warm water180ml
- Salt1 tsp
- Ground pork150g
- Cooked small shrimp, chopped100g
- Garlic, minced1 tbsp
- Fish sauce2 tsp
- Sugar1/2 tsp
- Vegetable oil2 tbsp
- Scallions, chopped, for garnish2 tbsp

Prepare the filling: Sauté minced garlic in 1 tbsp oil until fragrant. Add ground pork and cook until browned. Stir in chopped cooked shrimp, fish sauce, sugar, and black pepper. Cook for 2 minutes. Set aside to cool.

Make the dough: Combine glutinous rice flour, tapioca starch, and salt in a bowl. Gradually add warm water, mixing to form a soft dough. Knead briefly until smooth.

Assemble the dumplings: Divide dough, flatten into discs, fill with the pork and shrimp mixture, and seal into balls.

Cook the dumplings: Heat 1 tbsp oil in a non-stick pan over medium heat. Pan-fry dumplings for 4-5 minutes per side until golden brown.

Serve: Garnish with chopped scallions and serve immediately.
