- Dried shrimp50g
- Roasted peanuts50g
- Shallots2 medium
- Fresh mint leaves1/4 cup
- Fresh cilantro1/4 cup
- Thai chilies1-2
- Fish sauce3 tbsp
- Lime juice2 tbsp
- Sugar1 tbsp
- Water1 tbsp
- Saltto taste
- Black pepperto taste

Soak dried shrimp in warm water for 15-20 minutes until softened. Drain and roughly chop.

Peel and shred the green mango into thin strips. Place in a large bowl.

Thinly slice shallots and Thai chilies. Chop fresh mint and cilantro.

In a small bowl, whisk together fish sauce, lime juice, sugar, and 1 tbsp water to make the dressing. Adjust sweetness and sourness to taste.

Add the soaked dried shrimp, sliced shallots, and chilies to the shredded mango. Pour the dressing over the salad.

Gently toss everything together. Add roasted peanuts, chopped mint, and cilantro. Toss again.
