  • Sugar1/2 cup
  • Salt1/4 teaspoon
  • Coconut milk1/2 cup
  • Tapioca pearls (optional)1/4 cup
  • Toasted sesame seeds (garnish)1 tablespoon

    Rinse the dried black beans thoroughly.

    Soak the black beans in water overnight, or for at least 4-6 hours.

    Drain and rinse the soaked beans. Place them in a pot with 6 cups of fresh water.

    Bring to a boil, then reduce heat and simmer for about 45-60 minutes, or until the beans are tender.

    If using tapioca pearls, add them during the last 15 minutes of cooking.

    Stir in the sugar and salt. Cook for another 5-10 minutes until the sugar is dissolved and the soup has slightly thickened.

    Remove from heat. Stir in half of the coconut milk.

    Serve warm or chilled. Drizzle with the remaining coconut milk and sprinkle with toasted sesame seeds.
