- Coconut milk400 ml
- Water200 ml
- Sugar150 g
- Agar-agar powder10 g
- Food coloring (red, green, yellow)1 tsp each
- Longan (canned or fresh)100 g
- Red beans (canned or cooked)100 g
- Jackfruit (canned or fresh, sliced)50 g
- Tapioca pearls (small, cooked)50 g
- Salt1 pinch
- Toasted sesame seeds1 tbsp

Prepare the jellies: Divide agar-agar powder into three portions. Mix each portion with a different food coloring and a small amount of sugar and water. Cook each mixture separately until dissolved, then pour into shallow trays to set. Once firm, cut into small cubes.

Prepare the broth: In a pot, combine coconut milk, water, remaining sugar, and a pinch of salt. Heat gently, stirring until sugar dissolves. Do not boil.

Assemble the Chè: In individual serving bowls, combine the colorful jelly cubes, longan, red beans, jackfruit, and cooked tapioca pearls.

Ladle the warm coconut milk broth over the ingredients in each bowl.
